Viña EREMOS y EREMUS are made exclusively from the Tinta del Pais variety grapes that come from our vineyards..

After collection in 15 kilo crates, the grapes are transported immediately to the the winery.  They are selected again by hand on the conveyor belt before passing along to the de-stemming machine.  After the separation process and light pressing, they are moved along to the stainless steel tanks by means of a peristaltic pump which can push the grapes through without damaging them.

The alcoholic fermentation takes place in stainless steel tanks with a 15,000 kilo capacity, along with a soaking that lasts for about 18 days.  By careful temperature controlling, an excellent extraction of aromas and phenolic compounds is obtained.The malolactic fermentation also takes place in the stainless tanks.

Regarding sanitation, Bodega Páramo Arroyo has signed a contract with a public health management company, which independently controls all the vital areas within the winery that can affect the quality of the final product in terms of health.

 

Crianza

This wine remains in French and American oak barrels for a minimum period of twelve months.  Afterwards it it is poured into bottles, where it finishes the ageing process over at least two years.

Each harvest is different as far as the quality of the fruit is concerned, due to factors generally beyond our control, such as the climatic conditions that occur just before harvesting.  For this reason it is difficult to predict the exact quantity of grapes that will be assigned to create Crianza, Reserva or Gran Reserva wines.

What we can guarantee is that as regards the production methods and types of wine that we make, it is our policy to assign the most suitable grapes to each kind of wine.
